Vegan Sweet and Sour Stir-Fry Recipe
Approximately 4 Servings | 8 Weight Watchers PointsPlus per serving

  • 1 red pepper, diced
  • 1 yellow onion, diced
  • 3 cups broccoli florets
  • 2 cups brown rice, cooked
  • 14 oz can of pineapple chunks, chunks separated from juice
  • 1/2 cup water
  • 1 clove garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup low sodium soy sauce
  • 1/4 cup brown rice syrup
  • 2 tablespoons arrowroot powder, disolved in 4 tbsp cold water


  1. Combine pineapple juice (separated from chunks), water, soy sauce, vinegar, garlic and brown rice syrup in a saucepan. Bring the pot to a boil. Whisk in the arrowroot mixture. Cook until thickened, about 1 minute. Set aside.
  2. Heat a large non-stick skillet over high heat. Add the onion and red pepper and cook for 3 minutes. Add the broccoli and cook until tender, about 5 minutes. Add the pineapple and sauce and cook until heated through.
  3. Serve 1 cup of the stir-fry mixture over 1/2 cup brown rice for one serving.
