Vegan Chocolate Chip Banana Pancake Recipe 

6 Small Pancakes | 2.5 Weight Watchers PointsPlus per pancake*

Ingredients:

  • 1 large banana
  • 1 teaspoon baking powder
  • 1 tablespoon flaxseed meal + 2.5 tablespoon water
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons almond milk
  • 1/2 cup rolled oats
  • 1/4 cup whole wheat flour
  • 3 tablespoons vegan chocolate chips
  • pinch salt

Instructions:

  1. Preheat skillet to 325 degrees.
  2. Mix flaxseed meal and water, let sit for 3-5 minutes.
  3. Combine banana, baking powder, flax mixture, vanilla, salt and almond milk.
  4. Stir in oats and flour until combined.
  5. Fold in chocolate chips.
  6. Scoop 1/4 cup measurements onto skillet. Cook for 2-4 minutes on each side.
  7. Yields about 6 small pancakes.
