Vegan Cheezy Broccoli Rice Casserole Recipe

  • 3 cups vegetable stock
  • 1 1/2 cups brown rice
  • 3 cups broccoli florets
  • paprika, to taste
  • 2 yellow onions, peeled
  • 2 red peppers, seeded
  • 1/4 cup cashews
  • 1 cup nutritional yeast


  1. Add the vegetable stock to a medium saucepan and bring it to a boil high heat. Add brown rice, cover, and bring back to a boil over high heat. Reduce the heat to medium and cook, covered, for 45 minutes, or until the rice is tender.
  2. Meanwhile, combine the onions, peppers, cashews, and nutritional yeast in a blender until creamy. Add water 1 tablespoon at a time if needed.
  3. Place the broccoli in a steam basket and steam for 5 minutes, until crisp-tender. Rinse until cool and set aside.
  4. Preheat oven to 350F.
  5. Add the rice to a bowl with the onion/pepper mixture and steamed broccoli. Mix well.
  6. Spread the rice mixture in the bottom of a 9×13 nonstick pan.
  7. Sprinkle the casserole with paprika.
  8. Bake for 35 – 40 minutes.
