Vegan Bean and Sweet Potato Burger Recipe
9 Servings | 4 Weight Watchers PointsPlus per serving*

Ingredients:

  • 2 cups Great Northern white beans, cooked and drained
  • 2 medium sweet potatoes
  • 1 tsp lemon pepper seasoning
  • 2 tsp agave
  • ¼ cup wheat flour
  • ½ – ¾ cup Panko bread crumbs

Instructions:

  1. Preheat oven to 400 F.
  2. Wash/dry your sweet potatoes and pierce the skin a couple of times with a fork.
  3. Bake the sweet potatoes for 45 minutes. After they have cooled peel off the skin.
  4. Mash the beans and the sweet potatoes together.
  5. Mix in the flour, agave and lemon pepper seasoning.
  6. Form patty with mixture using about 1/3 cup per patty, coat with Panko crumbs (should make approximately 9 patties). Bake at 350 F for 20 minutes, flip the burgers and bake for an additional 20 minutes.
  7. Be sure to account for additional PointsPlus values based on the type of whole wheat bun used, and any additional toppings.
