Vegan Peanut Butter and Jelly Smoothie

1 Servings | 4 Weight Watchers PointsPlus

Ingredients:

  • 1/2 serving chocolate Protein Powder (I use Vega One)
  • 3 TBSP powdered peanut butter
  • 1 cup non-dairy milk (almond, cashew, soy…)
  • 1/2 cup water
  • 2 handfuls of spinach
  • 1.5 cups frozen mixed berries

Instructions:

  1. Place all ingredients in blender. Blend until contents liquify.
  2. Transfer to glass and enjoy!

Vegan Spinach Gnocchi and Pine Nuts

3 Servings – Approximately 1 cup per serving | 8 Weight Watchers PointsPlus per serving*

Ingredients:

  • 1 package vacuum-sealed spinach gnocchi (works well with regular gnocchi too)
  • 2 tablespoons Earth Balance Whipped Butter Spread
  • 3 tablespoons pine nuts
  • 2 garlic cloves, minced
  • 1 package fresh spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Cook gnocchi according to package directions
  2. Melt butter in a large nonstick skillet over medium heat.
  3. Add pine nuts to pan; cook 3 minutes or until butter and nuts are lightly browned, stirring constantly.
  4. Add garlic to pan; cook 1 minute.
  5. Add gnocchi and spinach to pan; cook 1 minute or until spinach wilts, stirring constantly.
  6. Stir in salt and pepper.

Vegan Pasta with Creamy Spinach Pesto Recipe
4 Servings – Approximately 1 cup per serving | 6 Weight Watchers PointsPlus per serving*

Ingredients:

  • 1 1/4 tsp table salt, divided, or more to taste
  • 8 oz uncooked whole-wheat spaghetti
  • 4 1/2 cups baby spinach
  • 2 tablespoons water
  • 1 1/2 teaspoons olive oil, extra virgin
  • 2 small garlic cloves OR 1 large garlic clove
  • 2 tablespoons vegan cream cheese
  • 1 teaspoon fresh lemon juice

Instructions:

  1. Bring a large pot of salted water to a boil (use 1 teaspoon salt). Add pasta and cook as package directs until al dente, about 8 minutes.
  2. Meanwhile, in a food processor or blender, process spinach, water, oil, garlic and remaining 1/4 teaspoon salt until smooth; set aside.
  3. Set aside 1/4 cup pasta cooking water and then drain pasta. Return pasta to pot; add vegan cream cheese and stir until melted.
  4. Add pesto sauce and toss to combine, adding reserved cooking water if a thinner consistency is desired.
  5. Season with fresh lemon juice and salt.

Vegan Quinoa and Spinach Recipe
8 Servings – Approximately 1/2 cup per serving | 3 Weight Watchers PointsPlus per serving*

Ingredients:

  • 1 tablespoon olive oil
  • 1 large uncooked onion, minced
  • 1 clove garlic, minced
  • 1 cup uncooked quinoa, rinsed
  • 2 cups vegetable stock
  • 1/8 tsp black pepper
  • 4 cups fresh baby spinach
  • 1/2 tsp table salt

Instructions:

  1. Heat oil in a large  skillet over medium heat. Add onion and garlic; cook, stirring frequently, until onion is tender, about 3 to 5 minutes.
  2. Add quinoa to skillet; cook, stirring frequently, until quinoa starts to turn golden brown, about 2 minutes.
  3. Add broth and black pepper to skillet; bring to a boil. Cover skillet and reduce heat to low and simmer for 13 minutes; stir in spinach.
  4. Cover skillet and cook until spinach and quinoa are tender and liquid is absorbed, about 3 to 5 minutes; season with salt.
