Vegan Coconut Rice and Beans Recipe
4 Servings – Approximately 1 cup per serving | 6 Weight Watchers PointsPlus per serving*

Ingredients:

  • 1 cup brown basmati rice
  • 3/4 cup light coconut milk
  • 1 1/2 cup black-eyed peas, cooked
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1 1/2 cups vegetable stock

Instructions:

  1. Place the rice, vegetable stock, thyme, salt and coconut milk in a saucepan and bring to a boil. Cover and reduce heat to simmer. Cook until the liquid is absorbed about 25-35 minutes.
  2. Remove from heat and mix with the cooked beans. Add additional salt to taste.

Vegan Sweet Red Pepper and Chickpea Curry on Rice Recipe

Vegan Red Pepper and Chickpea Curry Recipe
6 Servings – Approximately 1/2 cup per serving | 3 Weight Watchers PointsPlus per serving

Ingredients:

  • 1 red bell pepper, chopped
  • 1 large carrot, chopped
  • 1  six oz. cup of plain coconut milk yogurt
  • 1 teaspoon garlic powder
  • 1 tablespoon curry
  • 1 cup garbanzo beans
  • 1/2 cup coconut milk

Instructions:

  1. Mix chopped veggies, yogurt, coconut milk and chickpeas in a pot.
  2. Mix in curry and garlic powder.
  3. Cook on medium-high heat until soft approximately 30 minutes.
  4. Serve on top of brown rice (be sure to track additional PointsPlus values depending on how much brown rice you have).

Ingredients:

  • 1 low carb soft tortilla
  • ¼ cup black beans
  • ¼ cup brown rice
  • 2 tablespoons non-dairy shredded cheddar cheese (I use Daiya)

Ingredients (optional 0 PointsPlus toppings):

  • shredded lettuce
  • caramelized onion
  • salsa

Instructions:

  1. Mix and heat black beans, brown rice and cheese.
  2. Place on top of tortilla and add your 0 PointsPlus toppings.
  3. Roll up the burrito and enjoy!
