Make your own vegan “Tropichop”
1 Servings | 6 Weight Watchers PointsPlus per serving*

  • 1 clove minced garlic
  • 1/4 cup black beans, cooked
  • 1/4 cup frozen corn kernels
  • 1/4 cup caramelized onion
  • 1/2 cup brown rice, cooked
  • 1/2 cup sliced red / yellow bell peppers
  • 1 tsp extra virgin olive oil
  • Salt and pepper to taste


  1. Sauté the garlic and extra virgin olive oil for approximately 1 minute.
  2. Add the bell pepper. After about 2-3 minutes, add in the frozen corn kernels. Cook until the corn is tender.
  3. Add the brown rice, black beans and onion – cook until warm (approximately 2-3 minutes).
  4. Season with salt and pepper.
